1.     Green and White Pizza:

If you adore pizza as much like anyone else out there, then you may be tempted to try a healthier version of it – at least for once in your life. And if you haven’t yet tried this all-greens and white pizza – here’s how you can.

Ingredients:
·       10 to 12-inch round of pizza dough, rolled thin
·       3 oz - mozzarella
·       Extra-virgin olive oil
·       ¼ cup finely grated Parmesan
·       2 large handfuls baby arugula
·       1 juiced and zested lemon,
·       Kosher salt ( or any other for taste)

How to make it:

It’s really easy. Roll the dough into a thin pizza base. Now, add olive oil to grease the surface. Break mozzarella into pieces and spread evenly on the base. Next, add parmesan and bake for 8 to 10 minutes (until cheese is bubbling and the crust looks golden enough)

Meanwhile, in a bowl place the baby arugulas, next dress it with olive oil and lemon juice. Mix Well. Add salt to taste. Once the pizza is done, garnish it with this dressing and serve hot.

2.     Zucchini Shallots

If you speak of green food recipes, zucchini shallots simply take the top shelf. There are plenty of reasons to try out this recipe but I love it because zucchini shallots add so much flavour to your appetite – that you will end up loving it. Here’s how to make it.

Ingredients:

·       1 ½ pounds small zucchini
·       2 tbsp olive oil
·       Salt and freshly ground pepper to taste
·       2 tbsp fresh bread crumbs
·       1 tbsp butter
·       2 tbsp chopped shallots
·       4 tbsp chopped parsley

How to make it: Rinse the zucchini, pat dry and trim off the ends (no need to peel them off). Cut into thin slices (like you do with cucumber). Heat oil in a non-stick pan, add the zucchini and sauté it over high heat. Add salt and pepper and cook for about 5 minutes.

Next, add bread crumbs as well as butter to your pan. Wait until brown and then add shallots and cook for a couple minutes by frequently tossing it. Garnish it with parsley and serve hot.
